Bananas Foster at Brennans, New Orleans

So, I am back in New Orleans and once again, am in absolute food heaven. Jazz Brunch at Court of the Two Sisters this morning, we spent a good 2 1/2 hours eating. It's odd eating at an establishment that's been around since the 1830's - good luck finding something that old in Australia. I've been here two days and I've already loaded up on Jambalaya, Chicken Andouille Gumbo, Shrimp Creole, Red Beans and Rice, shrimp po'boys, Cajun fries, Muffaletta sandwiches, grits and grillades, crawfish étouffée, Cafe Du Monde coffee and beignets, creole crab cakes, creamed spinach, crawfish Louise, cornbread, buttermilk biscuits, eggs Benedict, bread pudding with whisky sauce and last but not least - my favorite, Bananas Foster.

We just popped into Brennans on Bourbon st to try the Bananas Foster - we were a bit nervous going into such a fancy place just for dessert. Easily identified as imposters in the black bowtie and fine china establishment, we were shown to a corner table with a smile and a wink. Impeccable and friendly service with just a touch of southern cheek - the decor is full of history and typical touches such as the ubiquitous ceiling fan - unecessary as Brennan's is well air-conditioned, but a nice touch nonetheless. A Brennans original invented in 1951, this dish is usually flambed, however I usually just do it in a pan on the stove! I also cut out the rum in this recipe as I make it in class - an alcohol free zone!

Preparing Bananas Foster at Brennans, New Orleans
Bananas Foster sans rum

1/4 cup butter
2/3 cup dark brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
4 bananas sliced into chunks
1/4 cup finely chopped pecans

Melt the butter in a pan and add the sugar, vanilla and cinnamon. Stir until combined and sugar is melting, and then add the bananas and pecans. Fry in the caramelizing mixture for around 8-10 minutes, or until bananas start to look caramelized and are thoroughly covered in the sauce.

Serve over vanilla ice cream immediately. Yum!
