Raspberry Lemonade
Serves 2
1/2 cup fresh raspberries
1/3 cup sugar
1/2 cup fresh lemon juice
1 cup water
Mash the raspberries with a potato masher in a bowl with the sugar. Let stand for 10 minutes, then press through a fine strainer to remove seeds, and discard. Make sure to press through all the raspberry flesh as you want to keep that in your drink! Stir in lemon juice and water, taste. If you prefer a sweeter lemonade add sugar 1 tablespoon at a time. Serve over ice and garnish with some whole raspberries if you desire.
